How much beef will I get if I purchase a quarter?
Approximately 95 - 105 pounds of beef and will need approximately 3-4 cubic feet of freezer space
Ground hamburger = 40-45 pounds
Short ribs = 4-6 pounds
Various roasts = 12-15 pounds
Stew meat = 5 pounds
Fajita meat = 2-3 pounds
Cutlets = 6 pounds
Rib-eye steak = 5-7 pounds
Strip steak & Filets = 4-5 pounds OR T-Bones 6 pounds
Sirloin steak = 3-4 pounds
Shank steak = 6-8 pounds
Costs: $825.00 which will average $8.25 per pound. This a 3.5% discount off regular retail price.

How much beef will I get if I purchase a half of a steer?
Approximately 195 - 205 pounds of beef and will need approximately 7 cubic feet of freezer space
Ground hamburger = 75 pounds
Ground chili meat = 5 pounds
Various roasts = 25-30 pounds
Stew meat = 10 pounds
Fajita meat = 5-8 pounds
Cutlets = 12 pounds
Rib-eye steaks = 13 pounds
Strip steak and Tenderloin Filets = 8-10 pounds OR T-bones = 10 pounds
Sirloin steaks = 6-8 pounds
Short ribs = 8-10 pounds
Brisket = 7-10 pounds
Shank steaks = 10-12 pounds
Liver = 5 pounds

We also offer custom cut sides of beef.
Current pricing is $5.15 per pound on the carcass (hanging) weight. This price does include the processing fees.
Example for a side of beef. 350 lb. carcass x $5.15 = $1,802.50 and will yield approximately 225 +/- lbs. of beef in your freezer. Carcass weights for a side will vary from 300 - 400 lbs. This will put 200 - 240 lbs of beef in your freezer!
